The 1215 sits on the south face of Fairmont Windsor Park, overlooking the private deck and manicured gardens. An intimate setting for special occasions, the 1215 serves authentic, high quality British cuisine using only the finest local produce from The Royal Farms, Windsor artisans and the hotel’s vegetable and herb gardens. In addition to a carefully thought-out menu with well-being at the heart of every dish, chef Luke Fouracre and the head sommelier offer private masterclasses. Steeped in history, the restaurant takes its name from the Magna Carta – one of the most important documents in history – which was signed in 1215 on the grounds of Runnymede nearby.
The 1215 Bar is located next to the restaurant and invites guests to enjoy an exquisite blend of sparkling wines, champagne and an extensive wine list served by a distinctive bar overlooking the south lawn.
Luke recommends Windsor Estate venison smoked in hay, celeriac, black pudding and pickled blackberries. He says, “This is my favorite dish on the 1215 menu, it combines the richness of venison with spicy pickled blackberries (a preservation method I often use to make the most of the seasons), accompanied by the earthy celeriac puree and hearty texture of black pudding to create a balanced dish that celebrates British cuisine. “
MOREISH and Schroders’ Botanicals Bar
All dishes are prepared by a team of experienced chefs in an open theater kitchen
Guests are invited to travel to MOREISH for a tempting breakfast and lunch with a touch of “Moreish” by day and exquisite European and Middle Eastern fusion dishes by night. All dishes at MOREISH are prepared using ingredients from The Royal Farms and local Windsor Artisans by a team of seasoned chefs in an open theater kitchen under the direction of Chef Matyas Rigo in a welcoming setting where friends and family can meet up. Matyas will also host a series of interactive masterclasses for MOREISH guests.
Matyas recommends the eggplant texture dish. He says, “This is one of my signature dishes, inspired by my mother’s eggplant salad, which is similar to Baba Ghanoush – a real childhood favorite. Eggplant is my favorite vegetable and I wanted to create a dish that takes advantage of its versatility to create something unique and delicious. “
Mark Brega recommends The Schroders’ spiced gin healed Scottish salmon with spicy lemon curd, dill-compressed cucumber, samphire, sea fennel and pumpernickel crumb. He says: “This is a wonderfully light and balanced dish that combines the warmth of the flavored gin, the finely hardened salmon, the pungent citrus taste and the salty sea herbs, which are best enjoyed with a light Sancerre or a white Pinot Noir. We wanted to create a dish that would take inspiration from a classic like Gravadlax (a Scandinavian style salmon) combined with gin from our bespoke Schroder’s Botanicals Bar to combine both the restaurant and bar concept. “
Schroders’ Botanicals Bar is located in MOREISH and serves a wide range of local and international gins from world-famous brands and passionate botanists. The in-house mixologists invite guests to experience new, tantalizing flavors and offer gin master classes, including premium tastings and cocktail classes. For early risers, the bar offers a selection of fresh fruit smoothies and juices to help guests start their day with a health boost.

Named for the mansion’s original owners who collected orchids from around the world, the bespoke dishes used are inspired by the delicate beauty of these flowers and the fragility of the surroundings.
Swapnil recommends the strawberry-pistachio poly. He says, “A charming childhood dish that dates back to the 19th century. I was inspired by this traditional British dessert to create a chubby poly with a twist. This decadent and delicious dessert consists of a pistachio jaconde sponge rolled in the middle with strawberry jam and yuzu gel and topped with a chopped pistachio garnish. “

The Library Club is one of the most stylish and charming places in the hotel. It is inspired by the library of the previous mansion and has many authentic features such as beautiful oak details and a renaissance style fireplace.
